When a liquid-liquid interface is populated by surface active species such as particles or phospholipds, a complex interfacial microstructure may develop which leads to mechanical properties of that interface, in addition to changes in surface tension. Understanding how these properties can be designed and controlled enables the rational design of multiphase materials. In this talk I will discuss progress made in measuring, controlling and using those properties for the rational design of materials focusing a bit on colloidal materials, showing how shape and roughness can be used to induce structuring via lateral capillary interactions. The resulting viscoplastic interfaces can then be used to arrest for example Ostwald ripening. Going beyond monolayers, similar questions can be asked about phospholipid bilayers. I will discuss new methods to study large area planar membranes.
