Ternary mixtures of lipids and cholesterol display a rich phenomenology, related to lateral lipid segregation phenomena and the organization of biological membranes. We will first introduce some of  the existing theoretical models for describing these systems, and present an original approach recently introduced by us [1]. Then, we will show how Landau-Ginzburg models can help to model the capillary forces at work between inclusions in the membranes. Finally, we will address some questions regarding local lipid dynamics and possible related experiments.
